New Love

I have a new love…..I love cooking and trying new (meatless) foods—much to the shock and awe of my hubby!  I NEVER EVER cook.  I detest cooking.  I find it to be painfully tedious and messy and gross!  Mushing up hamburger meat and cutting through raw chicken makes my skin crawl—-but those are horrors of my past!  Going vegetarian-ish has brought out an excitement for cooking!  I love cutting up veggies and discovering new ways to spice them up!  I am also loving the adventure of trying all the different meat substitutes such as, veggie burgers, tofu, tempeh, etc, etc.  So far I have conquered the art of grilling veggie burgers and Italian veggie sausage.  This weekend I’m going to attempt to make BBQ tofu—-we’ll see—-I’ll keep you updated.  Morning Star Farms has the best black bean veggie burger and “sausage” and they are so quick to make.  I just throw them on the Foreman, and within minutes they are done.  The key is to crisp them just a bit to get a firmer texture.  I also noticed that regular buns are too much bread and the “meat” taste gets lost in all the bread.  The new Arnold sandwhich thins are a perfect size!  The spicy black bean veggie burger is best with melted mozzarella, lettuce, tomato, mustard, ketchup, all on a toasted sandwich thin!  These also work great with the veggie sausage.  Sautee onions, mushrooms, green peppers, grill up the “sausage” and slap it on a sandwich thin!  DELICIOUS!
